Homemade Crumpets
A delicious breakfast bread enjoyed with honey, butter, or jam.

1 nonstick pan
crumpet rings
- 1 1/2 cups all-purpose flour
- 1 1/4 tsps. granulated sugar
- 3/4 tsp. table salt
- 1/2 tsp. instant yeast
- 1/2 tsp. baking soda
- 1 1/3 warm tap water
- oil if pan isn't non stick
1. In large bowl, keeping yeast from salt, combine flour, sugar, salt, yeast and baking soda. 2. Add warm tap water and use a handheld electric beater to beat mixture for 1 minute. Begin on low-medium speed to prevent batter from splattering, then increase to medium-high speed. 3. Let the batter rest in a warm place for at least 30 minutes or up to 45 minutes. It should look a bit bubbly when ready but shouldn't rise much. 4. Grease the inside of 3-4 crumpet rings with a little butter, then dip each one in flour and tap off the excessive flour.5. Heat a large flat bottom non-stick pan over medium heat for a couple of minutes. Carefully hover your hand over it and it should feel hot. 6. Place two-three pf the crumpet rings in the pan and spoon about a quarter cup of batter into each one. Let each crumpet cook for five to six minutes until you see a ring of cooked batter and bubbles bursting around the edge of the crumpet rings. 7. Remove rings and flip the crumpets for about 3 seconds. Remove from pan and allow to cool. 8. Clean rings, repeat the process until all batter has been used. To serve: Toast crumpets until golden brown before serving.
