Marinated Collard Green Salad

A different take on using collard greens. This makes for a refreshing salad.

Equipment

  • 1 Cutting board
  • 1 Knife
  • 1 Wooden spoon
  • 1 medium salad bowl
  • 1 medium mixing bowl for dressing

Ingredients
  

  • 6-7 raw collard green leaves (organic if possible)
  • 1/4 red, yellow, and orange bell pepper
  • 1/2 cup red onion
  • 1 small cucumber cut into slices then halved
  • 1 carrot grated or cut into small pieces

Vinaigrette Of Your Choosing

  • I prefer an orange vinaigrette. Many different recipes are available online 🙂

Instructions
 

  • Remove veins from washed collard greens and cut leaves into bite-sized pieces. Cut peppers into thin lengthwise pieces. Cut onions using this same technique. Grate or cut carrots into small pieces. Cut cucumber into circles then cut circles in half. Add all ingredients to a bowl and toss. Set aside.
    Make or purchase a vinaigrette of your liking. Pour about 1/2 -3/4 cup over salad. Mix well. Cover with plastic wrap and place salad into the refrigerator for at least 24 hours. Enjoy alone or with a protein of your liking.
