Emmer-Maple Muffins
Made from freshly ground Emmer wheat, these muffins are a healthy breakfast choice

1 Medium Mixing Bowl

- 1 1/2 Cups Ground Emmer Wheat
- 1/2 Cup All-Purpose Flour
- 1 Teaspoon Aluminum Free Baking Powder
- 1/2 Teaspoon Good salt
- 1 Cup Almond or Coconut Milk
- 1 Egg or Egg substitute
- 1 Teaspoon Essence of Orange
- 1 Cup Maple Syrup
- 1/2 Cup Currants
Preheat oven to 350 degrees and oil muffin pans. Mix dry ingredients together in a large bowl. Mix all wet ingredients together in a middle-sized bowl. Ad wet ingredients to dry. Mix together well. Add currants and mix in. Bake for 18-22 minutes. When finished, let muffins sit in muffin pan for at least two minutes before removing them to colling rack. Enjoy!
