Cut a thin slice of grapefruit and place in drinking glass. Squeeze grapefruit to remove all juice. Remove seeds and set juice aside. Crush about 3/4 of mint sprig leaving the other 1/4 piece to use as garnish. Add juice to crushed mint. Then add maple syrup and cold sparkling water. Mix gently. Add ice to drinking glass and pour mixture in, allowing just a few pieces of mint to be poured into the glass. Garnish with remaining piece of mint and enjoy.
