Lemon Poppy Seed Hot Cakes

2 medium mixing bowls
1 Mixing Spoon
1 frying pan
- 1 cup all-purpose flour
- 2 Tbsps. poppy seeds
- 2 tsps baking powder
- 1/4 tsp baking soda
- 1 1/4 cups buttermilk
- 1 lg egg
- 2 1/2 Tbsps. granulated sugar
- zest of one lemon
- 2 Tbsps. fresh lemon juice
- 2 Tbsps. melted butter and more for cooking
Place all dry ingredients in a bowl. Stir until well combined. Add all wet ingredients to include lemon zest to a separate bowl. Mix well. Add wet ingredients to dry ingredients and mix together. To make hotcakes, place about four tablespoons of batter to a buttered and oiled frying pan on medium heat. Cook on each site for about 3-4 minutes on each side until brown. Serve warm, with butter and syrup of your choice.
