Lemon Poppy Seed Hot Cakes

A delicious addition to any breakfast meal

Equipment

  • 2 medium mixing bowls
  • 1 Mixing Spoon
  • 1 frying pan

Ingredients
  

  • 1 cup all-purpose flour
  • 2 Tbsps. poppy seeds
  • 2 tsps baking powder
  • 1/4 tsp baking soda
  • 1 1/4 cups buttermilk
  • 1 lg egg
  • 2 1/2 Tbsps. granulated sugar
  • zest of one lemon
  • 2 Tbsps. fresh lemon juice
  • 2 Tbsps. melted butter and more for cooking

Instructions
 

  • Place all dry ingredients in a bowl. Stir until well combined. Add all wet ingredients to include lemon zest to a separate bowl. Mix well. Add wet ingredients to dry ingredients and mix together.
    To make hotcakes, place about four tablespoons of batter to a buttered and oiled frying pan on medium heat. Cook on each site for about 3-4 minutes on each side until brown. Serve warm, with butter and syrup of your choice.
