Simple Potato Salad
A quick summer salad suitable as an addition to any meal

- 3 large russet potato cut into 2-inch pieces
- 5 boiled eggs
- 1/4 peeled and cut into bite-size pieces
- about 3 Tbsps. sweet relish
- 2-3 Tbsps. yellow mustard
- 6 Tbsps. mayonnaise or more to taste
- pinch of salt
- 1/2 tsp ground black pepper
- 1 Tbsp smoked paprika
Boil cut potato in skin until soft. At the same time, boil eggs. When potatoes are ready remove from stove and let cool in a colander. Let cool enough to handle. The same should be done with the boil eggs. Once cooled down, peel potatoes and cut into 1/2-inch pieces. Remove shells from boil eggs and cut four of the eggs into bit size pieces and add to potatoes in bowl. Add onions, relish, mustard, mayonnaise, salt and pepper. Mix together well but be sure not to mix too much. Once mixed, add to clean bowl. Smooth the top of potato salad, grate the fifth boil egg on top of the salad, and sprinkle with paprika.
